Today I propose a very quick recipe with one of the most popular vegetables from our garden: zucchini! They can be cooked in a thousand ways: fried, in a pan, in the oven, and they can even be served raw in the form of spaghetti, stuffed and so on and so forth. Today, however, I propose the zucchini au gratin in the microwave: give me 5 minutes to make your mouth water!

Ingrediants
- 200 g of zucchini
- 10 g of breadcrumbs
- 1 tablespoon of extra virgin olive oil
- Q.b. of salt
- Q.b. of pepper
- 1 sprig of parsley
Materials Needed
- Microwave dish or pan
- Brush
- Mandolin or knife
Preparation
- Wash the courgettes, remove the stalk and cut them into thin slices (about 3 mm) with a knife or mandolin.
- Arrange the zucchini slices on a microwave-safe pan, taking care not to overlap them.
- Sprinkle the courgette slices with a tablespoon of extra virgin olive oil: for a better distribution of the oil, it is advisable to use a brush.
- Add a pinch of salt and a little pepper on the surface of the courgettes, then finish with grated bread.
- Cook the zucchini in the microwave for 5 minutes (combined micro + grill function).
- Remove the courgettes from the microwave and serve with freshly chopped parsley.

Following the same procedure, it is possible to prepare excellent gratin peppers, or red radicchio, Belgian salad or eggplant. Gratinated Zucchini are a low-energy side dish, whose calories are provided above all by lipids, followed by carbohydrates and finally by proteins. Lipids are mainly monounsaturated, mixed carbohydrates (fructose and starch) and proteins (insignificant) of medium and low biological value.
Fibers appear in medium quantities and cholesterol is absent.
Gratin Zucchini lend themselves to any diet, except for the one against celiac disease.
