So I thought of making an alternative vegetable milk made from spelled. The values nutritional values of this cereal are almost comparable to that of durum wheat and soft wheat, even if the protein content is higher.Let's see how spelled milk is prepared at home!

- Organic hulled cereal: 100 g of spelled
- 1 piece of Kombu seaweed
- 1 L of water
- 2 tablespoons of maple syrup
- 1 pinch of salt

In this recipe we used hulled spelled. Unlike the pearled spelled, the hulled spelled keeps the pericarp intact (very rich in fiber): for this reason, the hulled spelled requires soaking and a very long cooking (60 minutes). The same recipe can be repeated using the pearl spelled : in this case, it is not necessary to soak and the cereal will have to be cooked for only 30 minutes.- Soak the peeled spelled in water for at least 6 hours.
- Rinse the farro to remove some of the phytates.
- Bring 1 liter of water to a boil and cook the spelled for 60 minutes, adding a piece of kombu seaweed and a pinch of whole sea salt.
Why use kombu seaweed?
Kombu seaweed is a source of monosodium glutamate, a well-known flavor enhancer.- Introduce the immersion blender and blend the spelled together with the cooking water. Alternatively, use the glass blender. Those who want a more intense flavor and a greater creaminess, can reduce the amount of water.
- Line a colander with a clean cloth and place it all over a bowl. Filter the resulting slurry: the okara (a depleted cereal rich in fiber, from which it is no longer possible to extract the milk) will remain trapped in the cloth, while the liquid will be collected in the container under the strainer.
- Spelled milk can be sweetened with agave syrup or with other sweeteners. For an alternative flavor, flavor spelled milk with vanilla seeds, mashed banana, smoothed dates or cocoa. It can be stored in the fridge for 2 days, frozen. or pasteurized and collected in containers with screw caps.

Spelled milk is a vegan drink, low in calories, with a prevalence of energy due to carbohydrates; lipids and proteins are almost irrelevant. It contains a lot of fiber and does not bring cholesterol.
Spelled milk is suitable for any type of diet, including overweight, metabolic diseases and lactose intolerances; containing gluten, it does NOT lend itself to the diet against celiac disease.
Obviously, it CANNOT replace milk of animal origin in the diet due to the low intake of calcium and riboflavin (vitamin B2). The average portion is around 150-300ml (50-100kcal).
