Salads, fruit and vegetables abound on summer tables! On some days it is really impossible to light the fire and, you know, fresh dishes are the most popular! So, to counter the summer heat, I thought of a delicious and alternative cold dish, also ideal (but not only) for those who follow a vegan diet! Let's see the idea!

Ingrediants
- 200 g of Seitan, wheat or Mopur muscle
- 1 sprig of parsley
- A few basil leaves
- A few stalks of chives
- 100 g of brown rice
- 3 tablespoons of extra virgin olive oil
- 10 g of gomasio
- Untreated lemon juice
- 20 g of brown sugar
- 4-5 tablespoons of balsamic vinegar
- 400 g of fioroni figs
- 1 stick of celery

To make this dish we used the previously prepared Mopur. Mopur is a particular type of vegetable meat that is prepared by mixing pure gluten, legume flour, salt, spices, water, oil and mother yeast. As an alternative to Mopur, it is possible to use Seitan or Wheat Muscle.- Prepare the Mopur following THIS RECIPE.
- Prepare the balsamic vinegar reduction. Pour a few tablespoons of organic balsamic vinegar into a pan, add a tablespoon of whole cane sugar and cook, stirring occasionally. The reduction is ready when the liquid has evaporated halfway. cool: as the temperature drops, the glaze will thicken.
- Meanwhile, boil the brown rice for 15 minutes (or for the time indicated on the package). Drain the brown rice and flavor it with a tablespoon of oil and a mixture of aromatic herbs (eg chives, parsley, basil).
- Cut the Mopur into very thin slices: it is possible to facilitate the cut using the slicer.
- Wash the fioroni figs and cut them into more or less thin slices.
- Arrange the thin slices of Mopur on top of the figs. Prepare the dressing by emulsifying the oil and lemon juice. Sprinkle the vegetable meat carpaccio with the sauce obtained and add the gomasio (or sesame seeds and whole salt) and the celery cut into small pieces.
