Ingrediants
For the dough
- 70 g of butter
- 75 g of white flour of type 00
- 75 g of grated Parmesan cheese
- 20 g of sesame seeds
- 20 g (1 medium) of egg yolks

Materials Needed
- Rolling pin
- Large bowl
- Cheese grater
- Heart shaped cookie mold
- Latex gloves (optional)
- Food cutting board
- Baking paper
- Baking tray
Preparation
- Before starting the preparation, break the egg and divide the yolk from the white. Melt the butter in the microwave or in a saucepan.
- In a large bowl, pour the flour, grated Parmesan cheese, melted butter and yolk.
- Also add 20 g of sesame seeds and mix everything well until it forms a ball of dough, with a consistency similar to a shortcrust pastry.
- Leave the ball of dough to rest for 30 minutes, so that the ingredients mix well and everything congeals.
- After the necessary time, pour the remaining sesame seeds (20 g) into a cutting board and place the dough ball in it. Roll out the parmesan pastry with your hands and with a rolling pin, to form a disc with a thickness of about 6- 7 mm Cover again with the sesame seeds.
- With the heart-shaped mold, prepare the cookies and place them on a baking sheet previously lined with greaseproof paper.

These savory biscuits have been specially designed for Valentine's Day. However, it is also possible to prepare simple round or square cookies to adapt them to any occasion (eg a picnic with friends or a party with relatives!).- Bake in a hot oven at 180 ° C for 15 minutes.
