- 1 sprig of parsley

- q.s. of salt
- 1 teaspoon of tomato paste
- 1 shot of brandy
- 150 ml of milk
- 150 g of fresh ricotta
- 300 g of smoked salmon or fresh salmon
- 1 tablespoon of extra virgin olive oil

To prepare this recipe we used fresh salmon which we then subjected to a "home smoking. Find out how to smoke salmon at home."- First, cook the pasta (penne, in this case) in lightly salted water, respecting the cooking times indicated on the package.
- In the meantime, clean the smoked salmon: remove the skin, bones and cut the pulp into small pieces.
- Pour a tablespoon of extra virgin olive oil in a pan, then brown the pieces of salmon maintaining a high flame. Deglaze the salmon with brandy, season with salt and pepper.
- Continue cooking over low heat for about ten minutes, stirring occasionally.
- Prepare the accompanying sauce. In a beaker, pour the ricotta, milk and tomato paste: mix everything until you get a semi-thick and homogeneous mixture.
Why use ricotta?
Normally, pasta with salmon is prepared by browning the fish in butter and enriching the sauce with vegetable cream or fresh cream. In this case, we reduced the calories by using only a tablespoon of oil for cooking the salmon and replacing the ricotta with cream.- Drain the pasta al dente and add it to the salmon sauce. Turn off the heat and add the ricotta sauce. Flavor with plenty of parsley and serve immediately.
