What are
Clams are molluscs belonging to the class of Bivalves and to the family of Veneridae (or Veneridi); the term "clams" groups together numerous genera and about 400 different species all over the world.
Clams, in addition to being edible, are known (more than mussels, scallops and oysters) for the delicacy of their meat and for their low energy intake. Obviously, these characteristics determine a wide commercial success, supported by an intensive fishing withdrawal and by the development of special aquaculture (venericulture) on which the economy of various areas revolves (in Italy, mainly in the north-Adriatic: Emilia Romagna, Veneto and Friuli Venezia Giulia).
