- Q.b. of salt
- 7 g of baking powder
- 10 g of soluble coffee
- 70 ml of milk
- 50 g of butter
- 60 g (1 medium) of eggs
- 20 g of bitter cocoa
- 70 g of frumina
- 100 g of powdered sugar
For the icing
- 150 g of powdered sugar
- 3 tablespoons of water
- 1 teaspoon of soluble coffee

Preparation
- In a bowl, combine the dry ingredients: the sifted white flour with the frumina, the baking powder and the bitter cocoa, a pinch of salt and the icing sugar.
- Heat the milk and melt the instant coffee and butter in it. Combine the mixture thus obtained in the center of the powders, together with the egg. Mix all the ingredients until you get the consistency of the shortcrust pastry.

As an alternative to soluble coffee dissolved in milk, it is possible to prepare coffee with the mocha, weigh 70 ml and combine it with the rest of the ingredients.- Wrap the dough on a sheet of cling film and let it rest for 30 minutes.
- Take the dough, cut a slice and make a loaf.

To prevent the dough from drying out, it is advisable to cover the dough with cling film.- Cut the loaf into slices weighing about 15 g. Roll each slice in your hands to obtain a slightly flattened ball: work the piece of dough until you get the shape of a leaf or a giant coffee bean. As the biscuits are obtained, place them on a plate lined with baking paper, taking care to maintain a certain distance between one and the other.
- Proceed in this way until all the dough is used up: approximately 40 biscuits will be obtained.
- With a knife, draw a vertical line in the center of each cookie to simulate the shape of the coffee bean.
- Bake in a hot oven at 160 ° C for 12 minutes.
- Remove from the oven and allow to cool: the biscuits should appear puffy and soft, not crunchy.
- In the meantime, prepare the icing with the covering water: heat the water and dissolve the instant coffee in it. Mix the sifted icing sugar with the brewed coffee: in this case, it is advisable to add the liquid a little at a time until you get the right consistency. The glaze must not be too fluid, but not too thick either.
- Spread a teaspoon of sugar glaze on the surface of each cookie. Arrange the glazed biscuits on a plate and leave to dry at room temperature, avoiding covering with cling film.
- When the icing is solid and no longer sticky, you can gather the cookies and close them in tin boxes. They can be kept for 3-4 weeks.
