Preparation

- Melt the butter in the microwave, together with the milk and instant coffee. Mix thoroughly until the powder is completely dissolved. Add the coffee liqueur.
- At this point, add the liquids to the dry ingredients, adding the egg yolks: mix the mixture until you get a thick batter.
- Beat the egg whites until stiff, adding a pinch of salt.
- Gradually incorporate the egg whites into the cocoa and coffee mixture a few at a time, taking care to always mix from the bottom up to avoid letting the mixture collapse.
- Preheat the oven to 180 ° C.
- Insert the silicone cups into the steel muffin pan. Fill the molds up to ¾ of the height: bake in a preheated oven for about 20 minutes. We recommend the toothpick test before removing the muffins from the oven to make sure that the cake is perfectly cooked even in the center.
- In order for the muffins to cook, dedicate themselves to making the topping cream (white chocolate ganache and coffee). Coarsely chop the white chocolate and combine it in a saucepan. Melt the white chocolate together with the fresh cream, adding a teaspoon of soluble coffee.
- Turn off the heat and leave to cool.
- Remove the muffins from the steel mold and allow to cool.
- Combine the coffee ganache in a pastry bag with a star spout and decorate the surface of the muffins.
- Serve the coffee muffins with the decoration, perhaps accompanying with a cup of espresso coffee.
