- Ready product: 2-3 slices (about 150 g) of cotechino
- 20 g of grated Parmesan cheese
- Ready product: 250 g of dried lentils
- 2 tablespoons of extra virgin olive oil
- 280 g of pasta
- 1 pinch of red pepper

Please Note
To prepare this pasta we used Christmas leftovers, or cotechino and lentils. In any case, those who wish can prepare lentils and cotechino specifically for pasta, following THIS VIDEO RECIPE.- Cook the pasta in plenty of lightly salted water for about ten minutes (it is recommended to check the cooking time on the pasta package).
- In a pan heat the lentils by adding (if necessary) one or two tablespoons of extra virgin olive oil and a pinch of hot pepper.
- Cut the leftover cotechino into small cubes. Heat the pieces together with the lentils.
- Drain the pasta al dente and season it with the prepared sauce.
- Serve with grated Parmesan cheese.
