Ingrediants
- 10 tablespoons (150 g) of oat bran
- 4 tablespoons (120 g) of lean ricotta
- 20 drops of TIC sweetener or sucralose or 100 g of erythritol
- 80 g (4 medium) of egg yolks
- 160 g (4 medium) of egg white
- 1 vial of vanilla flavoring
- 1 teaspoon of baking powder
- 1 pinch of salt

Preparation
- Preheat the oven to 180 ° C.
- Shell the eggs and divide the egg whites from the yolks. Beat the egg whites until stiff, adding a pinch of salt.
- Meanwhile, mix the oat bran with the erythritol, vanilla flavoring, sifted baking powder, lean ricotta and egg yolks. Mix well until the mixture is creamy and thick.

Erythritol is a polyol with a zero glycemic index. It provides only 0.2 Kcal / g and has a sweetening power equal to 70% compared to classic sugar (sucrose).
Alternatively, it is possible to use the TIC sweetener in drops (based on cyclamate and saccharin), which provides 0Kcal / g, or the sucralose, allowed in the Dukan diet.- Gradually mix the egg whites firmly until stiff in the cream obtained from bottom to top, until the mixture is homogeneous and without lumps.
- Place the paper or silicone cups in the appropriate muffin mold. Fill each individual mold with the cream obtained, up to half a centimeter from the edge.
- Place the mold in a hot oven (180 ° C) and bake for 15 minutes. Before removing the mold, leave the muffins to rest for 10 minutes with the oven off; then, remove the mold and take out the muffins.
- Dukan muffins can be stored in an airtight container or nylon bag for one week.
