Ingrediants
For the "Snakes"
- 10 pieces of cloves
- A few pieces of red pepper or chilli
- 5 pieces (about 250 g) of chicken sausages
To serve (for the fake "Prato")
- 150 g of parboiled basmati rice
- A few drops of chlorophyll
- 1 pinch of salt
- 1 drizzle of extra virgin olive oil
Materials Needed
- Casserole for cooking rice
- Colander
- Pan with lid
- 5 long skewer sticks
- Table spoon
Preparation
- Pour plenty of water into a large saucepan and bring to a boil.
- When the water boils, pour in the rice (we recommend using non-overcooking rice such as parboiled or basmati) and salt to taste.
- Add a few drops of chlorophyll to the cooking water: in this way, the rice will absorb the color and you will be able to obtain a green rice (with which you will then prepare the "meadow" for the sausage "snakes"). Cook the rice for 12-15 minutes, respecting the cooking times indicated on the package.

Chlorophyll is used in herbal medicine as an anti-fermentative agent. In this case, however, the chlorophyll is used exclusively for coloring purposes. Those who do not find chlorophyll (however available in pharmacies or herbalists) can prepare a green risotto by cooking the rice on a chopped spinach sauce.- In the meantime, prepare the "serpentelli": pierce each chicken sausage with a long skewer stick, trying to obtain a wavy shape that mimics that of snakes.
- If the sticks are too long, cut off the excess.
- Brown the sausages well in a very hot pan (without adding oil or butter!), Maintaining a high flame. After browning the sausages on all sides, cover the pan with the lid, lower the heat to low and continue cooking for a few minutes.
- Remove the sausages from the pan to prevent them from absorbing excess fat. Allow to cool slightly, then gently remove the sticks from the sausages, which will have by now assumed the "snake" shape.
- Make 2 small holes in one end of each sausage to make the snake's eyes: just fit 2 cloves or 2 peppercorns.
- For the mouth and tongue, make a horizontal cut under the eyes and insert a small triangular piece of chilli or red pepper.
- At this point, the rice will be ready: drain the rice from the water, add a drop of extra virgin olive oil and place it on a large serving dish, like a lawn. Place the snake sausages on the green rice and serve.
