Today the star of the recipe is a plump, fragile and fleshy fruit: I'm talking about persimmon. Starting from its very sweet pulp, which we will reduce into a puree, we will obtain - with the help of gelatine - small masterpieces. We will therefore give life to inviting energy mini puddings which, in addition to being good, also boast a series of properties: diuretic, laxative ( excellent remedy against constipation) and hepatoprotective, therefore also suitable for those who suffer from some liver problems. Not to mention the high content of vitamin C, beta carotene (precursor of vitamin A). Let's see the ingredients for the preparation of this health pudding.

Ingrediants
for the pudding
- 400 g (pulp) of persimmon
- 8 g (about 3 sheets) of isinglass
- 20 g (if necessary) of sugar
- 80 ml of milk
To decorate
- 2 tablespoons of raspberries in syrup
- q.s. of white chocolate flakes
Materials Needed

- Small bowl
- Weight scale
- Small saucepan
- Pudding molds (silicone molds recommended)
- Plate to support the molds
Preparation
- First, soak the isinglass in mell "water.
- After cleaning the persimmons, cut them in half and scrape the pulp from the peel. To avoid adding too much sugar, it is recommended to use very ripe persimmons.
- Reduce the pulp into a puree and weigh what is obtained: the puree should have a weight of around 400 grams.
- Pour everything into a small saucepan, then add sugar (if necessary) and milk.
- Mix well and place the saucepan on the stove and, when the mixture has heated up, dissolve the gelatine after having squeezed it out of the water.

To preserve the vitamins and active ingredients of persimmon, it is recommended to prevent the mixture from boiling. The heat must gently heat the behavior, so as to allow the gelatin to dissolve.- Pour the thick liquid into the pudding molds and refrigerate for at least 3 hours.
- After the pudding has cooled completely, turn them out onto a plate and decorate to taste.
