Even people with diabetes can indulge themselves, from time to time, with a greedy dessert: what is important is to be able to formulate a suitable dessert, which does not burden the blood sugar and avoids the glycemic peaks linked to the consumption of sugars. So I propose the cake with pears, without sugar, without butter and with wholemeal spelled flour.

Erythritol is a polyol suitable for those suffering from diabetes because it has a glycemic index equal to zero, avoids glycemic peaks linked to the consumption of sugars and provides only 0.2Kcal / g. It has a sweetening power equal to 70% compared to sugar .
It can be replaced by 25g of fructose or 17g of stevia.- In the center, pour the smoothie obtained and the oil. Mix all the ingredients until you get a batter.
- At this point, add the remaining pieces of pear. Pour the mixture into a square pan lined with parchment paper and decorate in the center with whole slices of pear.
- Place the cake in the oven and bake at 180 ° C for 40 minutes. In cooking, the cake will not swell very much, but it will still be very soft and fluffy.

Pear Cake for Diabetics is a sweet food without added sucrose. It has a moderate caloric intake, even if the values refer to the composition of the raw and therefore well hydrated ingredients. Calories are mainly provided by carbohydrates and lipids, only secondarily by proteins. Most of the fatty acids are unsaturated, cholesterol is insignificant and fiber is quite abundant.
As the title suggests, this recipe is particularly suitable compared to other desserts in case of diabetes, but this does not mean that it can be consumed freely. Recall that the Pear Cake for Diabetics contains both lactose and gluten.
The average portion should not exceed 80g (110kcal).
