Materials Needed

- Long blade knife
- Rolling pin
Preparation
- First, prepare the ricotta pasta. In a bowl, sift the white flour, add the salt, the instant yeast for pies and mix with fresh ricotta, white wine and oil.
The right idea
Wine is important to give a pleasant and unique aftertaste to the rolls: the alcohol will evaporate during cooking, therefore it will not be perceived. In any case, the wine can be replaced with the same quantity of milk.- Mix the ingredients until you get a smooth, soft, elastic and lump-free consistency.
- Wrap the dough in cling film and let it rest for about ten minutes.
- Meanwhile, prepare the filling. Wash, desalt and cook the aubergines in the microwave or on the grill.
Did you know that
In this recipe we propose to use aubergines cooked in the microwave. In any case, not only is it possible to change the cooking method of the aubergines, but you can also use other types of vegetables, such as sautéed zucchini, peppers, etc.
To speed up the time, the pasta can be prepared in double doses and frozen, as if it were a simple shortcrust pastry or puff pastry.- Roll out the dough to obtain two large rectangles, a few millimeters thick.
- Fill the first sheet with aubergines, stringy cheese and ham, and the second with tuna, cream cheese and olice. Roll up starting from the long side to make a big roll.
- Cut the roll into slices 3-4 cm wide to obtain swivels or roses.
- Place the swivels on the baking tray, with the cut side facing down.
- Place in the oven and bake at 180 ° C for about 20-25 minutes, or until golden brown.
- Remove from the oven, allow to cool and serve. The swivels can be kept in the fridge for 3-4 days or in the freezer for a couple of months.
