- 130 g of chestnut flour
- 70 ml of milk
- 40 g (2 medium) of egg yolks
- 40 ml of corn oil
- 80 g of brown sugar
- 15 g of pine nuts
- Vanilla essence
- 1 pinch of salt
- 4 g of baking powder
- 130 g of white flour of type 00
- 30 g of sultanas

Preparation
- Soak the sultanas in warm water to soften them.
- Coarsely chop the pine nuts.
- Sift the chestnut flour and the white flour, add the brown sugar, a pinch of salt, the baking powder and the vanilla essence, then mix the powders.
- Mix the powders with the two egg yolks, the oil and the milk: add the pine nuts and the raisins softened and squeezed by the soaking water. Mix all the ingredients until you obtain a compact dough with a consistency similar to that of shortcrust pastry.
The alternative idea
As an alternative to pine nuts, other types of dried fruit can be used, such as hazelnuts, almonds or walnuts.
Wheat flour can be replaced with gluten-free flour (eg buckwheat flour): in this case, the dose of liquid must be corrected according to the consistency obtained.- Roll out the dough with a rolling pin to obtain a thickness of 4-5 mm.
- Using a cookie cutter with the shape of your choice, cut out the shapes and place the cookies on a plate lined with baking paper. Knead the scraps to get new cookies.
- Bake the cookies in a preheated oven at 160-170 ° C for 15-16 minutes (to keep them soft) or for 20 minutes (to make crunchy cookies).
- Remove from the oven, leave to cool on the pan and serve. Store the cookies for a week, in a tin box.
