Preparation
- Boil the peeled potatoes in plenty of water for 40 minutes or until soft.
- Peel the still hot potatoes and purée them with the help of a potato masher.
- Mix the potatoes with the white flour, seasoning with salt, pepper and nutmeg. Add an egg, which is important to bind the dough.

With this dough we will prepare the crumbled, so it is important to avoid working the potatoes with flour for a long time: keep a mixture of crumbs, irregular and not very compact.- Cut the pumpkin, remove the leathery and massive rind, then cut it into cubes.
- Pour two tablespoons of extra virgin olive oil in a pan and sauté the diced pumpkin: season with salt and pepper, and flavor with rosemary. Cook until the pumpkin is soft.
- Line a pan with a diameter of 24 cm with parchment paper: you can use a low ceramic pan for pies.
- Divide the potato mixture into two parts: line the base and sides of the mold with the potato dough to obtain a casket.
- Fill with diced cooked pumpkin and stringy cheese.
- Mix the remaining potato mixture with some breadcrumbs to obtain a very crumbly and dry mixture. Spread the crumbs over the filling.
- Drizzle with a drizzle of extra virgin olive oil and finish with grated Parmesan cheese.
- Place in the oven and bake at 180 ° C (mode: static) for 40 minutes or until the surface is golden.
- Cut the potato crumb into slices and serve as a classic quiche.
