Today I would like to prepare sautéed artichokes, ideal for flavoring pasta or for preparing crepes, baked lasagna, or savory pies.

Ingrediants
- 1 bunch of 800 g (5 pieces) of artichokes
- 50 ml of dry white wine
- Optional: 1 teaspoon (5 g) of rice flour

To clean the artichokes, remove the outer leaves (bracts), and cut the hardest part of the stem. Then remove the thorns and the upper part of the artichoke. With a digger or a sharp knife, remove the central beard (pappus).As they are cut into slices, the artichokes are dipped in acidulated water to avoid oxidation.- Heat a couple of tablespoons of extra virgin olive oil in a saucepan, also adding the garlic, chopped or poached.
- Pour the slices of artichokes - well drained from the soaking water - into the hot oil.
- Salt and pepper to taste. Deglaze with the dry white wine and, once the alcohol has evaporated, add a little water. Wait for it to boil and cook for about 20-30 minutes, or until the artichokes are soft.

It is advisable to check the vegetables often during cooking: if the liquid evaporates, add a little more water.- When cooked, raise the heat to brown them slightly. Dissolve the rice starch in one or two tablespoons of water, then pour the thickener directly into the saucepan: in this way, you can obtain a thick and creamy artichoke sauce.
- Finish with a generous handful of chopped parsley, continue cooking for another 2-3 minutes and serve, adding the grated rind of an organic lemon to taste.
