- 80 g (2 medium, whipped) of egg white
- 45 g of rice flour
- 200 g of red fruits
- 400 ml of milk
- 200 g of vegetable whipped cream
- a tablespoon (about 30 g) of pistachios
- 1 pinch of salt
- 125 ml of yogurt
- 50 g of sugar

- 1 saucepan to cook the base cream
- 1 mixer for the egg whites and cream
- 1 wooden spoon
- 1 pan licking spatula
- Transparent film
- Bowls
- Glasses or serving cups
- Decorations to taste

Preparation
- First, prepare the basic cream: pour the rice flour into a saucepan and gradually add the milk, stirring vigorously with a whisk to prevent lumps from forming. Then add the sugar and mix well.
- Bring to a boil, stirring occasionally, until the mixture has thickened. Leave to cool in the refrigerator for at least an hour.
- Meanwhile, beat the egg whites until stiff with a pinch of salt. Then whip the cream until stiff.
- When the mixture has cooled, add the yogurt, mixing well. Gently add the egg whites until stiff, taking care to always mix from one direction and not to dismantle the egg whites.
- Add the whipped cream by spoonfuls: you will get an extraordinarily fluffy and soft mixture.
- Leave to cool in the refrigerator for a quarter of an hour.
- Arrange a few spoonfuls of yogurt mousse on a cocktail glass or small bowl and decorate as desired with the red fruit. Serve very cold.
