Preparation
- Heat a stone or non-stick pan for about two minutes maintaining a high flame, taking care to cover with the lid in order to create and maintain a very high heat.
- When the pan is hot, pour a tablespoon of amaranth seeds, maintaining a very high flame: cover immediately with the lid and turn the pan often, directly on the fire to avoid burning the seeds. In about ten seconds, the amaranth seeds begin to burst, turning white.

The preparation of pop-amaranth is simple but, to obtain an excellent result, it is necessary to respect some precautions. First of all, the pan which must be hot: the amaranth seeds must undergo a thermal shock but, at the same time, remain in contact with the plate as little time as possible to avoid burning them. In fact, if the amaranth seeds they are poured on the lukewarm or barely hot pan, these must remain in contact with the plate for a long time before bursting: in this case, the seeds burn and, sometimes, do not burst.- Immediately remove the amaranth pops from the pan and transfer to a plate or bowl.
- Allow to cool and store the amaranth pops in an airtight jar for 2 weeks.
