- 4 hot chillies and 1 sweet piece of chilli
- 400 g of coppery tomatoes
- 1 clove of garlic
- 1 tablespoon of vinegar
- 1 pinch of salt
- 1 tablespoon (about 20 g) of sugar
- 1 tablespoon (about 10 ml) of extra virgin olive oil
- q.s. of tabasco

Preparation
- Wash the red and green chillies and dry them well.
- Cut the peppers into small pieces and grind them in the mortar. To reduce the spiciness, remove the seeds before pounding them in a mortar. Those who love very spicy flavors, on the other hand, can also crush the seeds.

The sugar, in addition to softening the flavor of the spicy chili sauce, will favor its viscosity.- Now proceed with cleaning and peeling the tomatoes. Boil a saucepan with a little water. Dip the tomatoes and leave them in the boiling water for 30 seconds. Remove the tomatoes from the water, cut them with a knife and peel them. Then cut the tomato pulp into small pieces. As an alternative to fresh tomatoes, peeled tomatoes or tomato sauce can be used.

Not all chili sauces require the use of tomatoes! Some particular chili sauces are prepared exclusively with chillies and spices: in this case, cooking is not essential. Other sauces are prepared with green chillies, with different degrees of spiciness.- Pour the oil into a very hot saucepan, and flavor with the garlic. Add the pieces of tomato, the chilli paste, the sugar, the vinegar, the salt and the Tabasco.
- Bring to a boil, then lower the heat and cook for 30 minutes, until the sauce thickens.
- Allow the chili sauce to cool and serve with tortillas, rice or beef.
