- 500 g of strawberries
- Q.b (60 g for every 100 ml of juice) of sugar
- Untreated lemon juice

Preparation
- Clean the strawberries, wash them gently, remove the stalk and blend them. Filter the smoothie obtained to separate the strawberry pulp and thus obtain only the juice.
The right advice
To avoid oxidizing the strawberry juice and to maintain the intense flavor of the fruit, it is advisable to collect the juice in a glass or ceramic container (not steel).
To avoid the smoothie filtering through the cloth, it is advisable to centrifuge the strawberries to immediately obtain the pure juice.- Weigh the strawberry juice and calculate 60 g of sugar for every 100 ml of juice obtained. Add the juice of one lemon.
- Pour the juice into a saucepan, add the sugar (white or brown, according to your taste) and stir over moderate heat until the sugar is completely dissolved and the mixture has started to boil.
- Meanwhile, sterilize the glass jars (or bottles) by boiling them in water for at least 20 minutes.
- Remove the jars from the water and put in the pot immediately with the syrup obtained, still boiling.
- Arrange the jars on a wooden surface, upside down, and allow to cool completely until cooled (or vacuum packed).
- Keep cool, preferably in the fridge and use within 12 months.
