- 50 g of fresh ricotta
- Cooked, boiled food: 150 g of potatoes
- 10 g of grated Parmesan cheese

Preparation
- First, wash the potatoes, combine them in a saucepan, cover with water and bring to a boil until cooked. Drain the boiled potatoes and purée them with a potato masher or with the tines of a fork.
- Cut the cooked ham into cubes and blend it. Mix the cooked ham pâté with the mashed potatoes and season with salt, Grana cheese and a spoonful of cornstarch. Mix with fresh ricotta (or with spreadable cheese). Work the mixture with your hands to obtain a soft dough.
- Spread the mixture with your hands or with a rolling pin, adding a little cornstarch if necessary: form a rectangle with a thickness of at least 1 cm. With a round-shaped cookie cutter, cut out shapes and place them on a baking sheet, as if they were cookies. The scraps can be kneaded again and made new burgers. If desired, scratch the surface of the burgers with the tines of a fork or with a zigzag spatula.

To speed up the time, burgers can also be prepared without a mold: in this case, take a generous spoonful of the mixture and roll it in your hands to form meatballs. Mash the meatballs with your hands to form medallions.
- Brush the surface with a little oil and cook immediately at 180 ° C for 15 minutes.
