To celebrate Women's Day, I started (obviously!) Thinking about the menu. In this festival everything is tinged with yellow and green to remember the colors of the mimosa including dishes! So let's bring the color to the plate: for the occasion I have created a special risotto, scented with saffron, lemon and fennel, and finished with crunchy pistachio! Not to be missed!

Ingrediants
- 320 g of rice
- 640 ml of water
- 1 sachet of saffron
- 50 g of pistachios
- Q.b. of fennel
- Untreated lemon juice and zest
- 50 g of soft cheese
- 1 tablespoon of salt or vegetable nut cream

To make this risotto we have chosen ingredients that recall the typical colors of Women's Day: the yellow of saffron and lemon, and the green of fennel and pistachios.- Bring the water to a boil and add salt to taste. As an alternative to salt, use a spoonful of homemade vegetable cube cream.
- Pour in the rice and mix. Lower the heat, cover with the lid and cook for 12-15 minutes (depending on the type of rice chosen), stirring often to facilitate the release of the starch from the grains: in this way, you will obtain a very creamy risotto.
- Meanwhile, chop some fresh fennel and toast the pistachios in a pan. Then chop the pistachios coarsely to obtain a grain.
- A few minutes before the rice is cooked, dissolve a sachet of saffron in very little hot water, and add it to the rice. Stir in some stracchino and flavor with lemon juice and zest.
- Turn off the rice and flavor with fennel.
- Serve and serve with chopped pistachios and some lemon zest.

Risotto Mimosa is a medium-energy first course, with a caloric prevalence attributable to carbohydrates, followed by lipids and finally proteins.
Fatty acids are mainly unsaturated, cholesterol is relevant and fibers are not too abundant.
