- 2 tablespoons of extra virgin olive oil
- 120 g of Cheddar

Preparation
- Prepare the cheese to add to the sauce: Cut the Cheddar or Edamer into cubes or chop it to make it easier to dissolve in the sauce.
- In a saucepan, pour the oil and flavor with the chopped hot pepper. Turn off the heat and allow to cool.
Watch out for spiciness
The spiciness depends on the type of chili chosen and the quantity. According to your personal taste, choose the most appropriate pepper and adjust with the quantity. Capsaicin, responsible for the spiciness, is concentrated above all in the seeds and internal filaments of the chilli.- Pour the cold milk into the cornstarch, stirring constantly with the whisk to dissolve the lumps.
- Pour the milk with the cornstarch into the warm oil, season with salt and bring to the boil until the sauce thickens.
- Remove the sauce from the heat and add the cheese: stir quickly until the cheese appears completely melted and blended with the bechamel.
- Allow the sauce to cool and use as desired. The spicy cheese sauce can be used to accompany tortilla chips (nachos) or to fill sandwiches.
