Ingrediants
- 100 ml of coffee "
- 20 g of bitter cocoa
- 100 g of peanut butter
- 200 g of white flour of type 00
- 50 g of potato starch
- 120 g (2 medium) of eggs
- 120 g of brown sugar
- 100 g of yogurt
- 16 g of baking powder
- 50 g of dark chocolate chips
- 1 pinch of salt

- Loaf pan with dimensions of 30 x 10 x 10 cm

Preparation
- To prepare the coffee plumcake, start by mixing the dry ingredients: in a bowl, sift the white flour with the bitter cocoa, the starch and the baking powder, then add the chocolate chips and a pinch of salt.
- In another bowl, collect the eggs with the brown sugar, add the peanut butter and work the mixture with an electric mixer. Add the coffee and yogurt.
Peanut butter
In this recipe we have purposely avoided the use of oil and animal butter: in fact, peanut butter represents an excellent alternative to these ingredients.
- Pour the liquid ingredients into the dry ingredients and mix until a soft and velvety dough is obtained.
- Spray pan release agent on the walls of a loaf pan measuring 30 x 10 x 10 cm. Pour the mixture and level with a spatula.
- Place in the oven and bake the coffee plumcake at 160 ° C for about 55 minutes, or until the inside is dry.
- Remove from the oven, leave to cool and serve for Father's Day (or for those with a sweet tooth).
