Ingredients for 2 rabbits (molds with a capacity of 300 g)
- 80 ml of untreated orange juice
- 200 g of carrots
- 40 g of rice flour
- 80 g of wholemeal flour
- 5 g of baking powder
- 40 g of almond flour
- 50 ml of corn oil
- 70 g of brown sugar
Materials Needed
- Vegetable peeler
- Electric or manual grater
- Rabbit mold with a capacity of 300 g
- Scale weighs food
- Brush
- Bowl
- Wooden spoon
- Sieve
Preparation
- Peel, wash and grate the carrots.
- Preheat the oven to 180 ° C.
- Pour the julienned raw carrots into a bowl. Then combine the wholemeal flour, rice flour, almond flour, brown sugar and sifted baking powder.
Alternatives
As an alternative to almond flour, you can use hazelnut flour. Those who do not like orange juice can replace it with soy milk.- Mix the powders well.
- Add the seed oil and orange juice to the remaining ingredients. Mix thoroughly until you get a thick cream.
- Oil the mold (in the shape of a rabbit) with seed oil, using a brush.
- Pour half of the dough into the mold and bake at 180 ° C for 30 minutes.

You can speed up cooking by using two molds of the same size or a classic round mold with larger dimensions.- Remove the rabbit gently and fill the mold again with the remaining dough. Cook as described in point 7.
