- 500 ml of soy milk
- 30 g of bitter cocoa
- 50 g of cane sugar, agave syrup or maple syrup
- 20 g of rice flour
- 8 g of cocoa butter

Preparation
- In a small saucepan, heat one part of soy milk (about 300 ml).
- In a bowl, sift the unsweetened cocoa powder and add the rice flour and brown sugar.

You can replace brown sugar with agave syrup. In this case, the sweetener should be added directly to the hot soy milk.
Among the alternatives, it is also possible to replace soy milk with another vegetable milk (e.g. rice milk, oat milk).- Pour the remaining cold soy milk into the bowl with the cocoa and rice flour, then mix thoroughly so that no lumps form.
- When the milk in the saucepan starts to simmer, add the cocoa butter. This operation is optional and can easily be omitted. Remember, however, that cocoa butter improves the creaminess and taste of the chocolate.
- Pour the mixture of rice flour and cocoa dissolved in cold soy milk directly into the saucepan and continue stirring until the boiling resumes: the chocolate will begin to thicken.
- Pour the vegan chocolate into the cups and serve.
