- 200 g of fresh tuna
- 1 piece of ginger
- 2 tablespoons of extra virgin olive oil
- 1 pinch of pepper
- 1 pinch of salt
- Q.b. of dill or fennel
- 5 g of flax seeds
- 5 g of sesame seeds
- 20 g (about 3) of courgette flowers

To prepare this recipe we use raw fish. In this case, we bought the thawed tuna, therefore already thermally chilled. Those who buy fresh tuna, on the other hand, will have to chill it at home to taste it in total microbiological safety: in such circumstances, the tuna must be left in the freezer at -30 ° C for 12 hours or at -18 ° C for 96 hours. After that, the fish will need to be slowly defrosted in the fridge before being eaten.- Cut the raw tuna into small cubes, avoiding excessive stress on the meat fibers.
- Clean the courgette flowers, then remove the pistil and the lower end. Cut the courgette flowers into thin strips.
- Pour the tuna tartare into a bowl and add the strips of courgette flowers, flax seeds and sesame seeds. Flavor with fresh peeled and grated ginger, chopped fresh fennel (or dill), oil, salt and pepper.
- Pour everything into a pastry cutter (cookie cutter) to give the tartare a round or square shape. Serve garnished with a few stalks of chives.
