- 400 g of cabbage
- 2 tablespoons of extra virgin olive oil
- Q.b. of salt
- Q.b. of pepper
- A few sage leaves
- About 500 ml of water
- Homemade food: 30 g of vegetable cube
- Hulled cereal: 200 g of spelled
- 50 g of parmesan cheese in pieces or grated parmesan cheese

In this recipe we used hulled spelled. Unlike the pearled spelled, the hulled spelled keeps the pericarp intact (very rich in fiber): for this reason, the hulled spelled requires soaking and a very long cooking (60 minutes). The same recipe can be repeated using the pearl spelled : in this case, it is not necessary to soak and the cereal will have to be cooked for only 30 minutes.- Soak the peeled spelled in water for at least 6 hours.
- Rinse the farro to remove some of the phytates.
- Wash the cabbage and cut it into thin strips.
- Pour a drop of oil into a large saucepan, sauté the cabbage and maintain a cheerful flame until golden brown. Season with salt and pepper. Cook for about 5 minutes.
- Meanwhile, bring a liter of water to the boil and add a couple of tablespoons of homemade vegetable cube cream.

In this recipe we used the homemade nut. Those who wish can replace it using homemade vegetable broth. In this case, it is sufficient to boil a mix of whole vegetables (eg celery, carrot, onion, tomato) in water for 40-50 minutes and add salt to taste.- At this point, combine the soaked spelled in the cabbage casserole, toast it lightly, then cover it flush with the prepared vegetable broth. Cook over low heat, stirring occasionally, for 60 minutes or more, following the instructions on the package. If necessary, add a few ladles of broth during cooking.
- When the spelled is cooked, flavor with the chopped sage and add the parmesan cut into very small pieces. Wait 5 minutes for the spelled to flavor, then serve with toasted bread or croutons.
