The crostoli, however, were born to be fried in boiling oil: however, we want to give another destiny to these very thin sheets of sweetened dough, simply cooking them in the oven. By doing so, we will obtain an extremely light and crumbly carnival sweet.

Preparation
- In a bowl, beat the egg with the sugar and butter. Also add the rum (or anise, whoever you prefer) and the untreated lemon zest and mix the ingredients with a whisk.

In fact, an egg weighs 60 g: the recommended amount of butter is 30 g, as well as that of sugar.- When the "liquid" ingredients have blended well, gradually add the white flour and the sifted yeast, to form a soft and elastic dough. It is advisable to knead the dough by hand and to knead it for a long time, possibly adding more flour, if necessary.
- Divide the mixture into two parts; then roll out two very thin sheets of dough, taking care to always flour everything to prevent the dough from sticking to the machine.

For a machine with 9 sizes, it is advisable to roll out the dough to N ° 6, until obtaining an almost transparent sheet.- With the zigzag wheel, make some fairly regular rectangles, approximately 5 x 8 cm in size. With the same wheel, engrave each rectangle on the surface.
- Place all the crostoli obtained on two ovenproof dishes, previously lined with greaseproof paper.
- Bake in a hot oven at 180 ° C for 13-15 minutes.
- Allow the crostoli to cool and sprinkle with icing sugar before serving.
