Kids are crazy about i sausage, you know well, to tell the truth, not only children! But what is hidden inside these foods? What are the ingredients that compose them? To avoid bothering us with these questions, there is only one solution: home preparation! In fact, today we will see how to prepare my very personal homemade and simplified version of the sausage of chicken and turkey, without added fats and 100% natural.

Ingrediants
For 8-10 frankfurters
- 250 g of chicken breast
- 1 teaspoon of cinnamon
- 1 teaspoon of flavorings for roasts
- 1 teaspoon of nutmeg
- Q.b. of pepper
- 1 teaspoon of chives
- 1 teaspoon of sweet paprika
- 1 teaspoon of cumin
- Q.b. of salt
- Boiled food: 70 g of beetroot
- 1 teaspoon of tomato paste
- 250 g of turkey
- 1 teaspoon of mustard

- Transparent film resistant to high temperatures

Preparation
- Combine the spices in a powerful blender and finely chop until you get a powder. In this case, we suggest the use of cumin, paprika, cinnamon, chives, pepper, nutmeg, flavorings for roasts; however, you can modify, add or remove some aromas in order to customize the sausage.
- In a food processor, combine the chicken and turkey meat, previously diced, and flavor with the chopped spices. Season with salt and season with the mustard paste. Add the boiled and chopped beetroot, and a teaspoon of tomato paste. Blend all the ingredients until you get a cream.
What are the beetroot and concentrated tomato good for?
Beetroot and tomato paste are two important ingredients to make the meat redder. The flavor will not be perceived particularly in the final product.- Bring a saucepan with plenty of water to the boil.
- Prepare a bowl with cold water: it will be used to facilitate the shaping of the sausage.
- Divide the mixture thus obtained into 8-10 portions.
- Prepare 8-10 sheets of transparent film (resistant to high temperatures).
- Spread a portion of flavored minced meat on one side of cling film. If necessary, wet your hands with water to facilitate modeling of the sausage. Squeeze the meat with your hands until you get a sausage. Roll the sausage with cling film: the cling film will act as a casing.
- Proceed in this way also with the others sausage.

To facilitate the putting in shape of the sausage it is advisable to combine the minced meat in a pastry bag, consequently making strips of meat to obtain sausages.- At this point, you can proceed directly with cooking in water or smoking.
What does home smoking consist of?
Smoking at home is much easier than you might think. Just follow the advice below. Line a bowl with aluminum foil. Fill the bowl with dry aromatic herbs (such as sage, rosemary, thyme, oregano) and dried leaves (eg bay leaves, dried garlic leaves). Light the fire and blow to burn all the aromatic woods. Do not as soon as the fire goes out, a thick smoke will be created. Immediately place the bowl on the lower part of the oven (turned off!). Place the food to be smoked (i sausage, in this case, previously pierced with a stick to let the smoke penetrate inside) on a grill positioned immediately above the bowl and close the oven door. Do not turn on the oven! Leave the food to smoke for 1-3 hours, possibly lighting the fire a couple of times for more intense smoking.- Diving i sausage in boiling water and cook for 10-15 minutes.
- Remove the foil and serve immediately with a side of vegetables.
