Nothing better than this statement could introduce the recipe I am about to offer you: accordion potatoes. Wondering why these potatoes were so baptized? Because, on each potato, we will practice very particular incisions that will allow us to obtain the shape that is very reminiscent of that of an accordion!

- Baking tray

Preparation
- Preheat the oven to 200 ° C.
- Wash the potatoes, brush them to remove soil and impurities, then dry them.

To prepare this recipe we used new potatoes, with a tender and very thin skin: for this reason we did not peel them. However, if the peel is too hard and thick, we recommend peeling them.- Place a potato vertically on the work surface. Insert a long pointed stick into the potato, taking care to insert it one centimeter from the base.
- Cut the potato (with the stick inserted) into very thin strips, descending with the blade of the knife until it touches the stick: in this way, it will be easier to obtain the shape of the accordion, holding the potato together at the base, opening it like a fan and avoiding to cut it all the way.
- Repeat the same operation for all the potatoes.
- Chop the rosemary and sage (or other types of aromatic herbs). Add the grated lemon zest.
- Gently open the slices of each potato and stuff with the chopped herbs, salt and pepper.Place the potatoes on the baking tray and pour a drop of oil on each one (3 tablespoons in total) and a few tablespoons of water.

For correct and uniform cooking, it is advisable to choose potatoes of the same size.
Furthermore, during cooking, it is advisable to steam the potatoes with a little water to create the right humidity.- Place in the oven at 200 ° C and bake for 50 minutes, or until the inside is soft.

Accordion Potatoes are a rather energetic side dish, with a caloric prevalence attributable to complex carbohydrates. The proteins (of medium biological value) are deficient and even the lipids do not reach very high levels; fatty acids are mainly monounsaturated, cholesterol is absent and fibers are in average quantities.
