Ingrediants
For the breadsticks
- 250 g of Manitoba flour
- 150 ml of water
- 15 g of brewer's yeast
- 6 g of salt
- 5 g of sugar
- 25 g of sesame seeds
- 25 g of extra virgin olive oil
To cover
- 70 g of sesame seeds
Materials Needed
- Large bowl
- Pastry board
- Sharp knife
- Baking tray
- Rolling pin
- Rectangular water collector
- Baking plates
- Baking paper
- Waterfall
Preparation
- Prepare the breadstick dough by dissolving the crumbled brewer's yeast in warm water, sweetened with a little sugar.
- In a bowl pour the flour and sesame seeds: mix the "powders" well. In the center, pour the water with the yeast, the extra virgin olive oil and season with salt, avoiding that it comes into direct contact with the yeast.
- Knead with your hands for a long time until you get a compact and rather soft dough.
- Put the bread dough to rise in a warm environment, until doubled in volume.
- When it is swollen, turn the dough onto a lightly floured pastry board and roll it out with a rolling pin to form a rectangle with an approximate size of 20X30 cm.
- With the knife, cut the pasta into strips 5-6 mm wide and 20 cm long. If necessary, roll out the strips slightly to obtain a cylindrical shape: you will obtain about 30 breadsticks.
- Prepare a rectangular container and pour plenty of cold water into it. Dip each breadstick into the water, then roll it in the sesame seeds.
Curiosity
Why dip breadsticks in water?
In this way, the water will act as a "glue" and will make the sesame seeds adhere perfectly to the breadstick. If we rolled the breadsticks directly on the sesame seeds without passing them in the water, the seeds would tend to come off during cooking.- Arrange the breadsticks in baking trays lined with the special wax paper. Bake in a hot oven for about 15-20 minutes, maintaining a fairly high temperature (190-200 ° C).
- Serve cold and, once cooled, store the breadsticks in a nylon bag.
