-
Ingrediants
- 350 g of mixed lean minced meat
- q.s. of pepper
- q.s. of salt
- 1-2 sticks of celery
- 1 clove of garlic
- 100 g (1 medium) of carrots
- 1 grated nutmeg
- 1 pinch of cinnamon
- 1 bay leaf
- A few sage leaves
- 1 sprig of rosemary
- 1 tablespoon of tomato paste
- About 200 ml (1 glass) of dry white wine
Materials Needed
- Casserole with lid
- Sterile gauze
- Wooden spoon
- Vegetable peeler
- Knife
- Mixer
Preparation
- Clean the vegetables, then peel the carrot and wash it thoroughly. Wash the celery. Cut the carrot and celery into pieces, then obtain a finely chopped mixture with the help of an electric blender.
- Prepare the aromas: in a sterile gauze combine the sage, rosemary, bay leaf and garlic clove. Weld the ends of the gauze with a kitchen cord.
The right idea
The gauze of aromas is an ideal device to prevent all the aromatic herbs from dispersing in the sauce!- Brown the minced meat in a very hot saucepan, taking care to shell the minced meat with a wooden spoon and to maintain a sustained flame.
Did you know that
To obtain a good meat sauce, it is not necessary to brown the meat in oil or butter, nor to prepare the fried onion!- Add the tomato paste (or the tomato puree), the chopped vegetables and the flavored gauze to the ground, which in the meantime will be perfectly browned. Those who wish can also add a shallot.
- Season with salt and pepper and flavor with spices to taste such as cinnamon and nutmeg. Cover the ground coffee with white (or red) wine and bring to the boil.
- Once it has boiled, lower the heat and cook over very low heat for about 1 hour and a half, until the liquid has partially dried.
- It is advisable to check the cooking often and, if necessary, to add more liquid.
- The meat sauce is ready to be consumed as desired.
