- 150 ml of water

- Oil a bowl and arrange the prepared dough in it. Cover with a sheet of transparent film: this phase of rest is called "bet".
- Leave the dough to mature at room temperature for at least 24 hours.

By letting the dough rest for a long time, the yeasts are "asleep" (their action is slowed down); as a result, a very aromatic and digestible mixture will be obtained.
It is advisable to use the oil only after rising: the fats in the dough, in fact, slow down the absorption of water.
The oats give a more intense flavor to the dough, slightly sweetish, but at the same time lighter.- After 24 hours, the pizza dough is ready to be rolled out (or cut into several blocks, if you want to get smaller pizzas). Preheat the oven to maximum temperature (250-280 ° C).
- Lightly flour the work surface and roll out the dough with your hands with the help of one or two tablespoons of oil, leaving the edges thicker: it will be very easy to spread.
- Fill the pizza with tomato sauce and mozzarella. Make a bunch of mimosa with boiled green beans (which act as a raceme), corn (to make the yellow flowers) and cherry tomatoes (to create the mimosa bow).
- With the special shovel, lift the pizza and place it on the refractory stone plate. Cook for about ten minutes at the maximum temperature.
Attention!
Those who do not have a refractory stone plate can bake the pizza in a normal rectangular pan (lined with baking paper) at 250 ° C for about 20 minutes.- Remove the 24 hour pizza from the oven and serve.
