Ingrediants
For the wraps
- 120 g of flour with seeds or wholemeal flour
- 6 tablespoons (60 ml) of water
- 1 tablespoon (10 ml) of extra virgin olive oil
- (optional) 1 pinch of salt
To serve
- 300 g of radicchio
- 1 tablespoon (10 ml) of extra virgin olive oil
- 1 pinch of salt
- q.s. of pepper
For the filling of wraps
- 30 g of rocket
- 20 g of sesame seeds
- 170 g of tofu
Materials Needed
- Bowls
- Wooden ladle
- Pastry board
- Food cutting board
- Vegetable knife
- Pan to cook the wraps
- Clear film or tea towel
Preparation
- Prepare the dough for the wraps by pouring the flour, salt (optional), oil and water into a bowl. Mix the ingredients thoroughly and for a long time, possibly adding enough flour to make the dough velvety.
Attention!
The dough of the wraps must have an even softer consistency than that of the bread: in this way, the rolling out with a rolling pin will be easier.- Let the dough rest for about twenty minutes, covering it with a cloth or with cling film.
- Meanwhile, mix the sesame seeds with the velvety tofu to form a cream. Then add the chopped rocket. Cut the previously washed red radicchio into strips and let it dry in a pan with a drop of extra virgin olive oil, a little water, salt and pepper.
- After the resting time, divide the dough into 4 parts and, with a rolling pin, roll out each ball obtained to form a very thin piadina with a diameter of about 15-20 cm.
- Put a non-stick or stone pan on the heat and, when it is very hot, cook the wraps (it is advisable to sear the wraps for 1 minute per side).
- Fill each piadina with the tofu, sesame and rocket cream. Roll each single piadina on itself, then cut 5-6 cm long logs. Garnish a plate with the slightly wilted strips of radicchio and arrange the piadina logs.
- Serve immediately
