Today I propose a classic appetizer that has now become a must of the Easter holidays: hard-boiled eggs stuffed with tuna. A really simple dish to make, fast, but always very appreciated by young and old. I couldn't forget this dish: what Easter table would it be without stuffed eggs?

Ingrediants
- 240 g (4 medium) of hard-boiled eggs
- 80 g of tuna in drained oil
- 1 or 2 anchovy fillets
- 1 sprig of parsley
- q.s. of pepper
- A few stalks of chives
- 30 g of Greek yogurt
- 20 g of capers

- Casserole for cooking eggs
- Electric blender
- Pastry bag or pastry syringe
- Teaspoons
Preparation
- Prepare the hard-boiled eggs as shown in THIS VIDEO. Leave to cool completely.
- Shell the eggs and cut them in half lengthwise. Gently remove the yolk from the eggs.
- In the blender container, combine the firm egg yolks, anchovy, drained tuna, capers and Greek yogurt.
Alternatively
As an alternative to Greek yogurt, you can use spreadable cheese or mayonnaise.- Adjust the pepper cream.
- Place the cream obtained in a pastry bag or in a pastry syringe with a star-shaped spout and fill the firm egg whites.
- Serve as an accompaniment to raw vegetables and decorate with a few stalks of chives and chopped parsley.
