- 700 g (5-6 medium) of potatoes
- A few stalks of chives
- 2 tablespoons of mustard paste
- 125 g of low-fat yogurt
- 1 tablespoon of pink pepper
- 1 pinch of salt
- 1 tablespoon of untreated lemon juice
- 1 sprig of parsley

Preparation
- Wash the potatoes, scraping them from any traces of soil.
- Place the peeled potatoes in a large saucepan and fill with water. As soon as the water boils, salt lightly.
- Cover with the lid, calculating about 30-40 minutes from boiling.
Perfect cooking of potatoes
The cooking time depends on the size of the potatoes: the bigger and heavier they are, the longer they will take to cook. For homogeneous cooking, it is advisable to choose potatoes of the same size.
To understand when they are ready, you can insert a skewer stick in the center of the potatoes: they will be ready when the heart is soft and the stick comes off easily.- Remove the potatoes from the cooking water, peel them and let them cool completely.
- Meanwhile, prepare the yogurt and mustard sauce. Pour the low-fat natural yogurt into a bowl. Add the juice of half a lemon, salt, pink peppercorns, chopped chives, chopped parsley and a heaping tablespoon of delicate mustard. Stir until all ingredients are combined.
- Once cooled, cut the potatoes into cubes and place them in a bowl. Flavor with the yogurt sauce.
- The potato salad can be served immediately or after an hour in the refrigerator: in the latter case, the potatoes will be even tastier.
