Preparation
- Soak the gelatine in cold water for 10 minutes.
- Meanwhile, chop the dark chocolate into cubes.
- In a saucepan, heat the milk, add the vanilla flavor and touch the boil.
- Squeeze the gelatin and add it to the hot milk.

In this case, it is advisable to dissolve the agar powder in milk at 80 ° C, taking care to mix continuously with a whisk to avoid the formation of lumps.- Pour the hot milk into the dark chocolate, then mix for a long time to form a cream. Set aside and allow to cool.
- Whip the fresh cream with an electric whisk and add it - slowly and a little at a time - to the chocolate cream (at room temperature).
- Combine the cream in a pastry bag with a star spout and distribute in single-portion glasses. Leave the chocolate mousse to cool in the fridge for at least one hour before serving.
- Decorate as desired with unsweetened cocoa powder, chocolate flakes, red fruits or biscuits.
- The mousse can be kept in the fridge for 3-4 days.
