Preparation
- In a bowl, combine all the dry ingredients, ie the oat bran, the erythritol, the sifted bitter cocoa, the corn starch and the baking powder.

In this recipe we used erythritol, a polyol with a zero glycemic index and a sweetening power of 70% compared to sucrose. It provides only 0.2Kcal / g. Alternatively, it is possible to use the TIC acaloric sweetener in drops or sucralose.- Shell the eggs and divide the yolks from the whites. Beat the egg whites until stiff, adding a pinch of fine salt.
- Meanwhile, mix the egg yolks and low-fat Greek yogurt with all the dry ingredients until you get a rather thick cream.
- Line a baking sheet with parchment paper; alternatively, a silicone mold can be used.
- Mix the egg whites slowly and a few at a time to the cream obtained, taking care to always mix from top to bottom to avoid letting the mixture go limp.
- Pour the mixture into the pan and bake in a hot oven (180 ° C) for about 25 minutes.
