Citrus Fruit Plumcake Puff Pastry

I was looking for a middle ground between a strudel and a soft cake: so I thought of trapping a soft dough in a casket of puff pastry, flavoring everything with lemon and orange zest and juice. The result? A soft puffed plum cake! Recipe not to be missed.

  • 220 gr of type 1 flour
  • 2 of eggs
  • 120 gr of yogurt
  • 1 (juice and zest) of untreated oranges
  • 1 (juice and zest) of untreated lemon
  • 1 sachet of baking powder
  • 80 ml of corn oil
  • 80 grams of brown sugar
  • 1 sheet (rectangular) of puff pastry
  • salt to taste

  Preparation

  • First, start preparing the dough. In a bowl, collect the yogurt along with the eggs and sugar.
  • Add type 1 flour, salt, sifted yeast and mix everything with corn oil to obtain a rather thick mixture.
  • Flavor the mixture with the grated zest of a lemon and an orange, then cut the citrus fruits in half, squeeze the juice, filter it and add it to the batter.
