- 10 pieces (1.6 kg) of chicken wings
- Optional: 20 g of breadcrumbs
- Half a cup of soy sauce
- 1 teaspoon of hot paprika or sweet paprika
- 1 teaspoon of garlic powder
- 1 teaspoon of mustard seeds
- 1 teaspoon of ginger powder
- 1 teaspoon of coriander seeds
- Q.b. of chilli
- Untreated lemon juice and zest
- 3 tablespoons of Tabasco
- 1 cinnamon stick

Preparation
- Divide each chicken wing into two parts, taking care to cut them at the level of the cartilage.
- Prepare the spice mix. In a mortar, grind the coriander seeds, mustard seeds, chilli and cinnamon. Mix everything by adding garlic, paprika and ginger powder.
- Squeeze the juice of half a lemon and emulsify it with soy sauce and Tabasco.
- Arrange the chicken wings on a bowl and sprinkle them with the emulsion and the spice mix, adding the grated lemon zest to taste.
- Leave the wings to marinate for a couple of hours in the refrigerator.
- Arrange the chicken wings on a baking dish lined with parchment paper, taking care not to overlap them. Finish with a sprinkling of grated bread and bake in a hot oven at 200-220 ° C for about 40 minutes. Finish cooking by turning on the grill.
