- 300 g of rice
- 30 g of Greek yogurt
- Homemade food: 30 g of vegetable cube
- 100 g of raw ham
- 2 tablespoons of extra virgin olive oil
- Q.b. of pepper
- Q.b. of salt
- 50 g of melon pulp
- 600 ml of water
- 50 ml of dry white wine

Preparation
- Bring the water to the boil and flavor to taste with homemade vegetable cube cream.

In this recipe we used the homemade creamy vegetable cube. As an alternative, you can prepare a vegetable broth with carrot, celery and onion or use plain salted water.- Wash the melon in cold water and remove any traces of soil. Cut the melon into slices, peel it and cut it into small cubes. Weigh 250 g of melon pulp.
- Pour the oil into a saucepan and sauté the melon cubes: cook over high heat for 2 minutes.
- At this point, add the rice, deglaze with the white wine and toast for a minute, stirring often.
- Pour a ladle of vegetable broth into the rice, then cover with the lid and cook over a very low flame for a few minutes. Pour in again a little broth at a time and continue sprinkling the rice gradually until cooked (12-15 minutes, depending on the type of rice chosen).
- In the meantime, cut the raw ham into strips and toast it in a pan, without adding seasonings: the raw ham must be slightly golden, but not burnt.
- When the rice is ready, turn off the heat and stir in a spoonful of Greek yogurt.

Greek yogurt is used to make risotto creamier, avoiding the addition of butter or cream.- Serve the risotto immediately, accompanying with a few strips of raw ham and freshly ground pepper.

Risotto with Ham and Melon is a not too energetic first course, even if the values on the side refer to the cooked food, therefore rehydrated.
Calories are mainly provided by carbohydrates, followed by lipids and proteins. The carbohydrates are essentially complex, the fatty acids of the monounsaturated type and the peptides of medium biological value. Fiber appears to be deficient, as is cholesterol.
Risotto with Prosciutto and Melon is a first course that lends itself to most diets, better in small portions for those who are overweight, with type 2 diabetes mellitus or hypertriglyceridemia. It is suitable for the diet against celiac disease but could create some adverse symptoms in the more sensitive lactose intolerant. It should be excluded from the vegetarian and vegan diet.
