My lemon tree is asking for my help! This year has been really good and is giving me so many fruits that the weight of too many lemons makes itself felt. So I thought I'd take advantage of it and prepare an excellent limoncello. Ready to breathe deeply the wonderful scent of fresh lemons?

Ingrediants
- 700 ml of water
- 500 ml of 95 ° alcohol
- 500 g (about 6) of untreated lemon
- 600 g of sugar
Materials Needed
- Vegetable peeler
- Glass bottles
- Hermetically sealed container
- Chopping board
- Ceramic knife
- Colander
- Funnel
- Casserole
- Wooden spoon
- Aluminum or paper bag
Preparation
- Carefully wash the organic lemons and dry them with a cloth.
- Peel the lemons with a vegetable peeler, taking care not to remove the white part because it is bitter.
- Cut the zest into small pieces, preferably using a ceramic knife.

The use of ceramic knives preserves the active ingredients contained in the lemon peel. The steel, on the other hand, could alter them.- Pour the pure alcohol into an airtight container together with the lemon peels reduced to small pieces. Leave the lemon peels to macerate for 3 weeks, taking care to turn the container often to facilitate the extraction of the active ingredients.

Considering that the active ingredients contained in the lemon are photosensitive and thermolabile (sensitive to light and heat) it is advisable to wrap the glass container with aluminum foil, or to prefer a dark glass container. For the same reason, it is preferable to keep the alcohol with lemon peels in a cool place, away from heat sources.- After 3 weeks, proceed with the preparation of the syrup. Bring the water to a boil and dissolve the sugar. Leave to cool completely.
- Add the cooled syrup to the alcohol and lemon zest. Leave to macerate for another 7 days.
- Then filter the liqueur from the lemon peels (which in the meantime will have yielded most of the active ingredients), bottle and serve iced. Limoncello can be stored in the freezer: the alcohol and sugar contained inside prevent it from freezing.

Limoncello is a super alcoholic drink not suitable for the usual diet. It does not lend itself to the diet against overweight, nor to that for metabolic diseases. The average portion of Limoncello is about 50ml (120kcal).
