Reputed by most not only edible, but even of good quality, sandra is one of the most popular and appreciated freshwater fishing products in Europe. It is a very popular prey for both amateur rod fishermen and professional fishermen. with nets; the interest of spearfishing divers is limited to the areas surrounding the lakes in which it is granted. It is cooked roasted, especially in the oven and on the grill, or boiled in water or steam; it is also widespread fried.
Pike-perch fish belongs to the 1st fundamental group of foods, as a nutritional source of proteins with a high biological value, vitamins (especially water-soluble of group B) and specific minerals (iron, phosphorus). It is low in energy and contains mainly unsaturated fats, with a good percentage of the semi-essential polyunsaturated omega 3 eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA); it also brings cholesterol.
Similar to the Italian territories, the zander is native to Central Northern Europe. Its presence and diffusion in the waterways of the Bel Pese, especially in the center-north, are the natural consequence - whether desired or not - of human activities. The reasons behind this phenomenon are still unclear today. Many argue that it was a "biological maneuver" to counter the expansion of catfish (Danube catfish, also alien). Others, on the other hand, believe it is escaped, at least initially, from the tanks used for sport fishing. The only certainty is that the entry of this voracious predator has compromised - especially initially - the already disastrous balance of endemic aquatic ecosystems (lakes, rivers, canals, etc.).
