- 500 g (3 pieces) of plantain
- Q.b. of pepper
- Q.b. of salt
- 2 tablespoons of peanut oil
- 1 teaspoon of sweet paprika
- Cooked food: 200 g of azuki beans
- A few stalks of chives
- 30 g of peanuts
- 400 g of coconut milk
- About 400 ml of water

Preparation
- Peel the plantains. Remove the ends from the plantains. Cut them lengthwise with the tip of a knife, making several strips a couple of centimeters wide. Tear off the peel with the aid of a knife if necessary. Cut the pulp into chunks. Combine salt and pepper.
The alternative to plane trees
The plantains are reminiscent, in texture and flavor, of potatoes or cassava: for this reason, the soup can be prepared by replacing the plantains with these foods.- Collect the pieces of plantain in a saucepan, add the coconut milk and cover flush with water. Cook the plantains for 15 minutes or until soft.
- Meanwhile, season the azuki beans. Pour the peanut oil into a pan, add the beans and flavor with paprika (sweet or spicy according to your taste). Raise the heat and brown the legumes.
- When the plantains are soft, reduce them to a cream with the help of an immersion mixer or a vegetable mill. If necessary, adjust the consistency by increasing or reducing the dose of liquid.
- Season the soup with a few stalks of chives.
- Serve the soup with the roasted peanuts and paprika flavored beans on the plate.
