Ingrediants
For about 15 pancakes
- 100 g of wholemeal flour
- 50 g of cornstarch
- 60 g of brown sugar
- 3 tablespoons of corn oil
- Vanilla essence
- 70 ml of acquafaba
- 3 g of baking powder
- 120 ml of soy milk
- 1 pinch of salt
- 100 g of strawberry jam
- 20 ml of untreated lemon juice

Preparation
- Prepare the dough for the vegan pancakes. In a bowl, sift the wholemeal flour together with the cornstarch and baking powder. Add a pinch of salt.
- Mix the powders with 2 tablespoons of corn oil and soy milk until you get a fairly soft consistency.
- In the meantime, pour the acquafaba into a bowl and work the liquid with an electric whisk until it forms a voluminous and foamy mass, similar to stiff egg whites. Add the lemon juice and brown sugar, then work the mixture for others. 2-3 minutes, with electric whips.

The water of the chickpeas, subjected to mechanical processing with whips, has rising capacities due to the presence of some particular substances, called saponins: in contact with water, the saponins develop a stable and persistent foam.
- Incorporate the mass of acquafaba into the mixture, mixing gently from the bottom upwards: you will obtain a frothy, not too thick mixture.
- Proceed with the preparation of the pancakes. Heat a pan until it becomes hot, then grease it with a drop of oil.
- With a spoon, take a part of the batter and pour it on the hot pan, forming discs.
- Cook the vegan pancakes for a couple of minutes on a moderate flame, turning them often with the spatula to avoid burning them.
The idea without oil
If you do not want to use the oil to cook the pancakes, prepare some squares of parchment paper and place them on the pan. Pour the batter directly onto the parchment paper and turn the pancakes when the surface is golden, then gently peel off the parchment paper.
- Serve hot pancakes with red fruit or strawberry jam.

Appreciate the freshly made pancakes, very hot: serve them with red fruit jam, just like I did! If, on the other hand, you are a cocoa lover, fill them with chocolate spreadable cream! Also try the protein pancakes with egg whites.
