- 400 g of peppers
- 2 tablespoons of extra virgin olive oil

Preparation
In this recipe we used fresh homemade wholemeal pasta (butterflies format). To find out the recipe, click on THIS VIDEO. To speed up the times, it is still possible to use ready-made wholemeal pasta.
- Clean the peppers: wash them in cold water, cut them in half and remove the stalk, the filaments and the internal seeds. Cut the clean peppers into matchsticks.
- To increase the digestibility of peppers, it is recommended to soak them in a solution of cold water and salt for at least 20 minutes.
- Drain the peppers from the soaking water, rinse them in running water and toss them in a pan with a drizzle of oil, salt, pepper and sweet paprika. Continue cooking for about ten minutes.
- Meanwhile, bring the water to a boil, season with salt and add the fresh wholemeal pasta. Cook for 5 minutes or more, depending on the thickness of the pasta. If necessary, pour a drop of oil into the cooking water to prevent the dough from sticking.
- Before the end of cooking, remove the pasta from the water with a slotted spoon and finish cooking in the pan with the pepper sauce.
- Finally, add the chopped parsley and serve with a generous amount of grated Parmesan cheese.
- Serve the steaming pasta.
