Often, with the heat that is "pampering" us these days, it happens that the appetite goes away! Sometimes I would feed only on fresh fruit but I don't think my diners would like such a menu! "everyone's appetite, but without weighing it down! Here's my idea: fast, fresh and very light turkey rolls!

Ingrediants
For 6 rolls
- 6 slices (120 g) of turkey breast
- A few stalks of chives
- A few basil leaves
- A few leaves of lettuce salad or a gentle salad
- 20 g of gomasio
- 200 g of fresh ricotta
For the accompanying sauce
- 125 g of low-fat yogurt
- 1 teaspoon of mustard
- A few mint leaves
- q.s. of salt

Preparation
- Prepare the stuffing of the rolls. In a bowl, mix the fresh ricotta (sifted if necessary) with the gomasio and the chopped basil.

Gomasio is a condiment prepared with sesame seeds, salt and possibly seaweed, widely used in macrobiotic and oriental cuisine. As an alternative to gomasio, ricotta can be flavored with lightly toasted sesame seeds and a pinch of salt.- Spread a salad leaf (eg lettuce) on a thin slice of cooked turkey breast and stuff with a strip of flavored ricotta. Roll up the slice and seal with a chive stalk.
- Proceed in this way until all the turkey slices have been used up.
- Now prepare the accompanying sauce. In a beaker, combine the natural low-fat yogurt, a few mint leaves, a teaspoon of mustard and a pinch of salt. Blend with the immersion blender until you get a sauce.
- Serve the rolls, whole or in half, with the mint sauce.

The Lightweight Turkey Rolls are foods of animal origin rich in proteins of high biological value, with a portion of lipids that is not excessive and an even more scarce portion of simple carbohydrates; the breakdown of fatty acids is almost in equilibrium between saturated and unsaturated. Cholesterol is not excessive but fiber is lacking. The energy intake is not very high, which is why the dish is suitable for feeding the overweight subject.
There are no major contraindications as regards the application in nutritional regimens against metabolic pathologies. The average portion of Lightweight Turkey Rolls is about 150-250g (160-265kcal).
