Today, however, I would like to prepare some very special "Santas", which you could serve during the Christmas lunch as an appetizer or as a morsel between one course and the other: Santa Claus with strawberries and cheese!

Ingrediants
- 300 g (10, large) of strawberries
- 200 g of ricotta or spreadable cheese
- 1 teaspoon of aniseed
- About 10 g of chocolate chips or silver beads
- 1 piece of ginger
- 50 ml of balsamic vinegar
- 5 g of sugar
Materials Needed
- Pastry bag or pastry syringe with star-shaped spout
- Bowl
- Spatula
- Chopping board
- Knife
- Frying pan
Preparation
- First, prepare the reduction with balsamic vinegar. In a pan, heat 5 tablespoons of balsamic vinegar with 5 g of sugar: cook over high heat for a few minutes, stirring often. Allow to cool.

To speed up the time, you can buy ready-made balsamic glaze.- Clean the strawberries: wash them in fresh water, dry them gently and remove the stalk with a knife.
- Cut each strawberry at the "height" of the opposite end to the stem (cap): in this way, you will get small triangles that will act as Santa's hat.
- Mix the spreadable cheese with the aniseed and flavor with grated ginger. Transfer the cream into a pastry bag or into a pastry syringe with a star-shaped spout.
Alternatives
As an alternative to spreadable cheese, you can use fresh ricotta! The cheese can be sweetened with a teaspoon of powdered sugar: in this case, the Santas must be served as a dessert.- Stuff the strawberries with the cream: in this way, you will get the beard and face of Santa Claus. Place the strawberry cap on top of the filling (to obtain the hat). Finish the Santa Claus hat with a tuft of cream, to represent the pompom.
- Apply the chocolate decorations (or beads) to represent the eyes.
- Spread the balsamic glaze on a plate, decorate the Christmas strawberries as desired and serve.
